If someone is not capable to read or understand this manual, all instructions and safety rules must be explained to him thoroughly. This concerns your safety! The user has to instruct his employees on the use of the machine according to the operating manual. It is recommended to keep a record of these instructions given.The user has to observe local regulations, e.g.:- obtaining an operating license,- health regulations,- industrial safety regulations and employment prohibitions,- supply and disposal requirements,- emission and environmental protection requirements.Keep minors, children and people not instructed away from the machine! The products used must meet local health regulations. Additionally, frozen meat at temperatures down to -15 °C and of a 80 mm diameter can be processed. You can also use this machine to grind products listed here, if these are not meant for human consumption. Use the machine only for applications indicated in the scope of application. No measures have been provided for protection against dust or infection hazards that may be caused by the processed product. If required, additional measures have to be taken to prevent such risks. Do not lower the unloader into the bowl if the cap of the cleaning opening is unscrewed. The personnel is to be instructed at regular intervals, at least once a year, using these Operating Instructions. Only operate the machine with its cover closed. To feed the product, the cover may only be opened for a short time while the machine is running. The cutters are properly protected by the cutter cover, the guards, the flap trap, and the warning triangle. However, if handled improperly they can be reached with your hands. You are prohibited to reach under the closed cutter cover. The machine is equipped with a high-speed cutter system. After opening the knife cover a brake stops the knives within 4 seconds in accordance with regulations. You are prohibited from reaching into the cutting area before the cutters have completely stopped The cutters may break and the machine may sustain damage, if the machine is used with an improperly installed cutter head or improperly ground cutters.Only use balanced cutter heads for cutting speeds exceeding 3600 RPM.See User Information for Cutter Head The cutters may jam or break, if the machine is fed with impermissible raw materials for processing or quantities exceeding the specified bowl capacity. It meets all health requirements of the EEC machinery directive and the EEC directives for handling meat and meat products.All outer machine elements are made of non-corroding material. The complete surface of the machine was subject to special treatment and therefore is easy to clean. Due to its large doors all areas are easily accessible for cleaning and maintenance.The cutter shaft is driven in cutting and mixing mode by a infinitely variable and reversible motor via a highly efficient V-belt unit. The basin is driven by a separate 2 speed motor with reversible polarity. The infinitely variable reversible cutter shaft speeds and the independently controlled 2 basin speeds enable the optimum operating mode for the production of all processed meat products. The switch cabinet and the vacuum pump are deliveredas separate parts. The machine must be transported using deviceswhich support the whole base of the machine6.2 Conditions for installationThe machine has been designed for installation on a solid,waterproof floor, which can be easily cleaned. The slope of the floorshould not exceed 3%; the admissible floor-loading capacity has tobe at least 1000 kp/m². The place of installation has to meet the localhealth and work place regulations. Luminous intensity has to amountto at least 300 Lux.6.3 Required space for operation and maintenanceThe operator works in front of the machine. The vacuum pump should be mounted near the machine, out of the way of paths and if possible on the wall. It must be supplied with water. On the suction side, the pump must be connected to the cutting mixer; on the delivery side the air/water mixture must be conducted to a floor drain. The plastic hoses required for this purpose are included with the machine.6.5 Supply connectionsAll supply connections must be made at the place of installation by K+G Wetter service personnel or accordingly trained and authorised qualified personnel.6.6 Electrical connectionThe machine may only be connected to the mains by a qualified electrician.The system is delivered with the connection cables from the switch cabinet to the cutting mixer and to the vacuum pump. The customer is responsible for their connection to the machine terminals, according to the included circuit diagram, by a qualified electrician.The electrical connection should be carried out according to the technical specifications on the identification plate and in Chapter 1. The cable diameter must be determined according to the fuse in the cable. Neutralisation, earthing, residual current or overcurrent release protection should be installed according to the conditions on site.6.6.1 Compressed air connection (Option)The compressed air connection is only provided if the cutting mixer is equipped with a steam cooker.The cutting mixer must be connected by the customer to the compressed air connection (6 mm hose connection. The compressed air must be de-humidified and de-oiled. Customer service should be informed of any discrepancy. The voltage variations may not be larger than + 10% and - 5%. Malfunctions and premature wear may be expected with larger deviations. The guarantee provisions do not apply in this case.Check the direction of rotation with continuously adjustable key drive:Inspection of direction of rotation by an engineer using rotating field measuring instrument. Ensure “Clockwise rotating field” at machine main switch!6.7.1 Vakuum pumpFill the vacuum pump with water. Switch the pump on briefly and check the motor direction of rotation (see arrow on pump housing). To start the machine set the main switch to "I". Stop the machine by switching it to "0". The switch can be secured with a padlock. For switching during operation, the keys on the operator panel must be used, otherwise the safety functions may be put out of operation.7.1.2 Emergency-stop switchUse the emergency-stop switch to prevent or reduce risks of danger to people or objects. If you use the emergency-stop switch, all motors will be turned off and the knife shaft will be stopped by a brake within 4 seconds. When hitting the emergency-off switch it will lock, pull the emergency-off switch to unlock it.The emergency-off switch only affects the control voltage circuit. It does not shut down the main circuit and therefore cannot be used to switch on the voltage of the machine. This can only be done via the main switch.In case this switch is defective, only have K+G WETTER service staff or personnel from an authorized repair shop replace it with an equivalent switch.7.1.3 Machine safety switchA safety switch, which is located inside the machine monitors the closed condition of the cutter cover.The switch have a person protection function.Only K+G WETTER customer service or another authorised dealer is allowed to replace it with a switch of the same kind.7.1.4 Limit switchesActivation of the vacuum function is only possible with the vacuum cover closed. The closed vacuum cover position is locked via a limit switch.If defective, this switch should only be replaced with an equivalent switch by K+G WETTER service personnel or an authorised repair shop.7.1.5 CoversTo prevent people from touching drive and electrical components, these are hidden behind the housing, doors and screw-fixed covers. Before opening the doors or covers the main switch must be set to "0". You are only allowed to start the machine, if the housing is completely closed.7.1.6 Vacuum coverThe vacuum cover also serves to reduce airbourne noise emissions. The vacuum cover may be briefly opened for adding material. The closed condition of the cover is monitored by a switch. The machine will switch down to a lower cutter RPM if the vacuum cover is opened during operation, to enable the adding of material whilst the machine is running.7.1.7 Cutter coverThe purpose of the cutter cover is to make sure that nobody touches the rotating knives. Operate the machine only when the cutter cover is closed. Closed condition is controlled by a switch in the machine housing.The machine will come to a complete stop 4 seconds after opening the cutter cover (emergency-off function).You are prohibited to stop the machine by opening the cutter cover.7.1.8 Finger guard/hand deflectorHand deflectors and finger guards are fitted inside the cutter cover to prevent access to the rotating cutters. They must not be removed or altered.7.1.9 Knife cleaning guardTo reduce the danger of injury when cleaning the knives, there is a cleaning guard, which must be stuck on the cutter set when the cutter cover is open.7.1.10 Cleaning guard for the operator panelThe cleaning guard protects the operator panel from damages resulting from cleaning equipment and cleaning agents. The guard has to be pushed on tightly and has to trigger the emergency-off switch.7.1.11 Braking deviceWhen hitting the emergency-off switch or when opening the cutter cover the knife shaft is stopped by an electrical brake within 4 seconds. For restarting the machine the cutter cover must be closed and the emergency-off switch unlocked. The purpose of this emergency brake is to reduce dangers. It will wear quickly if used frequently.Using the main switch deactivates the braking equipment.7.2 Daily safety checksDo not operate the machine without properly working protective equipment. All covers on the machine base must be closed tight. Hand deflectors, splash and finger guards, control panel and cutter cleaning safety cover must be provided. Lift the vacuum cover when the cutter shaft is running fast. The machine must switch down to a slower speed (50 % slower). Actuate the emergency-stop switch or raise the cutter cover at a slower cutter speed (up to 1500 rpm). The cutter shaft must come to a stand-still within 4 seconds. The cutter cover may be raised up to 5 cm, before the emergency-stop is triggered. The operator may programuser-specific data in the memories and call it up by pressing a key(keys refer to Fig.2, item nos. 3 and 4). The cutting mixer has beenequipped with a time-out feature and temperature and bowl rotationshutoffs.8.1.3 Cutter drivebFor safety reasons the knife drive can only be started when thecutter cover is closed. Turn on the knife drive by using the green key >I<. Select the required cutting speed by using one of thememory keys >1 - 6<.As an option: Select reverse mixing by using the memory keys > 1 or2 <. Increase the speed by using the key >+< Decrease the speed by using thekey >-< Turn off the cutter drive by using the red key >0<. Thebowl drive will be switched off at the same time.If you change the rotational direction of the knives, the bowlwill stop for a short time.
